A couple years ago, I created a birthday wishlist on my blog… and some of my amazing friends came together and got me an awesome bread maker machine! I don’t think I’ve ever posted about it, so here we go. Can I just say that if you are into making breads, you should TOTALLY get a bread maker. It makes kneading and baking 100 times easier. A few weeks ago, I decided I wanted some garlic bread. And when this girl gets cravings, she gets what she wants. I kid, maybe. I essentially made this Garlic Bread recipe minus some of the herbs that I didn’t have on hand. All it took was mixing a bunch of things together and throwing it into the machine. Wait patiently as the house fills with the amazing smell of garlic. Once done, wait until it’s slightly cooled and slice it up. But for me, being a condiments gal, I firmly believe that all bread needs some spread. At the moment, i was craving some pesto and decided to whip up this recipe below.
Sun-Dried Tomato Pesto Spread
Ingredients:
4 ounces sun-dried tomatoes
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
1 tablespoon chopped garlic
1/4 cup chopped pine nuts
3 tablespoons chopped onion
1/4 cup balsamic vinegar
1 tablespoon tomato paste
1/3 cup crushed tomatoes
1/4 cup red wine
1/2 cup olive oil
1/2 cup grated Parmesan cheese
salt to taste
Directions:
1. Place sun-dried tomatoes in a bowl and cover with warm water for 5 minutes, or until tender.
2. In a food processor or blender combine sun-dried tomatoes, basil, parsley, garlic, pine nuts and onion; process until well blended. Add vinegar, tomato paste, crushed tomatoes and red wine, and process. Stir in olive oil and Parmesan cheese. Season with salt to taste.
The pesto was the milk to my cereal, the bee to a flower, the sunshine to a rainbow, you get my drift. It was amazeballs and I can’t wait to make it again.
